Ingredients

  • Fresh spinach - 200 grams
  • Eggs - 4 large
  • Greek yogurt - 100 grams
  • Feta cheese - 50 grams, crumbled
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Whole grain bread - 2 slices

Steps

  1. In a large skillet, heat olive oil over medium heat and add minced garlic, sautéing until fragrant.
  2. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Season with salt and black pepper.
  3. While the spinach is cooking, bring a pot of water to a gentle simmer. Add a splash of vinegar to help the eggs poach.
  4. Crack the eggs into the simmering water, poaching them for about 3-4 minutes until the whites are set but the yolks remain runny.
  5. Toast the whole grain bread slices until golden brown.
  6. To assemble, place a generous portion of sautéed spinach on each slice of toast, followed by two poached eggs on top.
  7. Drizzle with lemon juice and top with crumbled feta cheese and a dollop of Greek yogurt.
