Ingredients

  • Eggplant - 1 medium
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Tomato sauce - 1/2 cup
  • Cherry tomatoes - 100 grams, halved
  • Kalamata olives - 50 grams, pitted and sliced
  • Red onion - 1/4, thinly sliced
  • Fresh oregano - 1 tablespoon, chopped
  • Fresh basil - 1 tablespoon, chopped
  • Nutritional yeast - 2 tablespoons (for a cheesy flavor)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant into 1 cm thick rounds and place them on a baking sheet.
  3. Drizzle the eggplant slices with 1 tablespoon of olive oil and sprinkle with salt, black pepper, and garlic powder. Toss to coat evenly.
  4. Roast the eggplant in the preheated oven for 20 minutes, flipping halfway through, until tender and slightly golden.
  5. While the eggplant is roasting, prepare the toppings. In a small bowl, mix the tomato sauce with chopped oregano and set aside.
  6. Once the eggplant is done, remove it from the oven and spread a spoonful of the seasoned tomato sauce on each slice.
  7. Top each eggplant slice with halved cherry tomatoes, sliced Kalamata olives, and red onion.
  8. Sprinkle nutritional yeast over the toppings for a cheesy flavor.
  9. Return the topped eggplant slices to the oven and bake for an additional 10 minutes.
  10. Remove from the oven, garnish with fresh basil, and serve immediately.
