- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Cinnamon - 1/2 teaspoon
- Oregano - 1 teaspoon
- Tomato paste - 2 tablespoons
- Vegetable broth - 1/4 cup
- Whole wheat burger buns - 2
- Spinach - 1 cup, fresh
- Nutritional yeast - 2 tablespoons
- Almond milk - 1/2 cup
- Cornstarch - 1 tablespoon
- Lemon juice - 1 tablespoon
- Nutmeg - a pinch
Steps
- Preheat the oven to 200°C (400°F).
- Arrange the eggplant slices on a baking sheet, brush both sides with olive oil, and sprinkle with salt and black pepper. Roast in the oven for about 25 minutes, flipping halfway through, until tender and golden.
