Ingredients
- Eggplant - 1 medium, sliced into rounds
- Olive oil - 2 tablespoons
- Ground beef or lamb - 200 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 2 tablespoons
- Dried oregano - 1 teaspoon
- Cinnamon - 1/4 teaspoon
- Salt - to taste
- Black pepper - to taste
- Egg - 1 large
- Greek yogurt - 100 grams
- Grated Parmesan cheese - 30 grams
Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant into rounds, sprinkle with salt, and let it sit for 15 minutes to draw out moisture.
- Rinse the eggplant slices under cold water and pat dry with paper towels.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, cooking until translucent.
- Add the ground beef or lamb to the skillet and cook until browned. Stir in the tomato paste, oregano, cinnamon, salt, and pepper. Cook for an additional 5 minutes, then remove from heat.
- In a bowl, mix the egg, Greek yogurt, and half of the Parmesan cheese until smooth.
- In a baking dish, layer the eggplant slices at the bottom, followed by the meat mixture, and top with the yogurt mixture. Repeat the layers if desired, finishing with the yogurt mix on top.
- Drizzle the remaining olive oil over the top and sprinkle with the remaining Parmesan cheese.
- Bake in the preheated oven for 25-30 minutes or until the top is golden and bubbly.
- Allow to cool slightly before cutting into bite-sized pieces and serving.
