- Eggplant - 200 grams
- Almond flour - 50 grams
- Egg - 1 large
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Fresh dill - 1 tablespoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - for frying
Steps
- Begin by peeling the eggplant and cutting it into small cubes.
- Sprinkle the eggplant cubes with salt and let them sit in a colander for about 15 minutes to draw out excess moisture.
- After 15 minutes, rinse the eggplant under cold water and pat dry with paper towels.
- In a large mixing bowl, combine the dried eggplant cubes, almond flour, egg, minced garlic, chopped parsley, chopped dill, salt, and black pepper.
- Mix until well combined. The mixture should be slightly sticky; if too dry, add a splash of water.
- Heat a generous amount of olive oil in a skillet over medium heat.
- Once the oil is hot, drop spoonfuls of the eggplant mixture into the skillet, flattening them slightly with the back of the spoon.
- Fry the fritters for about 3-4 minutes on each side or until golden brown and crispy.
- Remove the fritters from the skillet and place them on a paper towel-lined plate to absorb excess oil.
- Serve warm with a side of tahini or a fresh salad.
