Ingredients

  • Eggplant - 200 grams
  • Almond flour - 50 grams
  • Egg - 1 large
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 1 tablespoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - for frying

Steps

  1. Begin by peeling the eggplant and cutting it into small cubes.
  2. Sprinkle the eggplant cubes with salt and let them sit in a colander for about 15 minutes to draw out excess moisture.
  3. After 15 minutes, rinse the eggplant under cold water and pat dry with paper towels.
  4. In a large mixing bowl, combine the dried eggplant cubes, almond flour, egg, minced garlic, chopped parsley, chopped dill, salt, and black pepper.
  5. Mix until well combined. The mixture should be slightly sticky; if too dry, add a splash of water.
  6. Heat a generous amount of olive oil in a skillet over medium heat.
  7. Once the oil is hot, drop spoonfuls of the eggplant mixture into the skillet, flattening them slightly with the back of the spoon.
  8. Fry the fritters for about 3-4 minutes on each side or until golden brown and crispy.
  9. Remove the fritters from the skillet and place them on a paper towel-lined plate to absorb excess oil.
  10. Serve warm with a side of tahini or a fresh salad.
