Ingredients

  • Pizza dough - 200 grams
  • Eggplant - 1 medium (about 250 grams)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 150 grams, halved
  • Red onion - 1 small, thinly sliced
  • Dairy-free feta cheese - 100 grams, crumbled
  • Fresh basil - 10 grams, chopped
  • Oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for 10 minutes to draw out moisture, then rinse and pat dry.
  3. In a mixing bowl, combine the eggplant slices with 1 tablespoon of olive oil, minced garlic, oregano, salt, and pepper. Toss until the eggplant is well coated.
  4. Spread the eggplant slices on a baking sheet lined with parchment paper and roast in the preheated oven for 15 minutes, flipping halfway through until golden brown.
  5. While the eggplant is roasting, roll out the pizza dough on a floured surface to your desired thickness and shape.
  6. Transfer the rolled dough to a pizza stone or baking tray.
  7. Brush the remaining tablespoon of olive oil over the pizza crust and sprinkle with a little salt.
  8. Once the eggplant is done, remove it from the oven and layer the roasted eggplant, cherry tomatoes, red onion, and crumbled dairy-free feta cheese evenly over the pizza.
  9. Bake the pizza in the oven for another 10-12 minutes or until the crust is golden and crispy.
  10. Remove the pizza from the oven, sprinkle with fresh basil, slice, and serve hot.
