- Pizza dough - 200 grams
- Eggplant - 1 medium (about 250 grams)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cherry tomatoes - 150 grams, halved
- Red onion - 1 small, thinly sliced
- Dairy-free feta cheese - 100 grams, crumbled
- Fresh basil - 10 grams, chopped
- Oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 220°C (428°F).
- Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for 10 minutes to draw out moisture, then rinse and pat dry.
- In a mixing bowl, combine the eggplant slices with 1 tablespoon of olive oil, minced garlic, oregano, salt, and pepper. Toss until the eggplant is well coated.
- Spread the eggplant slices on a baking sheet lined with parchment paper and roast in the preheated oven for 15 minutes, flipping halfway through until golden brown.
- While the eggplant is roasting, roll out the pizza dough on a floured surface to your desired thickness and shape.
- Transfer the rolled dough to a pizza stone or baking tray.
- Brush the remaining tablespoon of olive oil over the pizza crust and sprinkle with a little salt.
- Once the eggplant is done, remove it from the oven and layer the roasted eggplant, cherry tomatoes, red onion, and crumbled dairy-free feta cheese evenly over the pizza.
- Bake the pizza in the oven for another 10-12 minutes or until the crust is golden and crispy.
- Remove the pizza from the oven, sprinkle with fresh basil, slice, and serve hot.
