- Feta cheese - 50 grams, crumbled
- Cucumber - 1/2, grated
- Greek yogurt - 100 grams
- Lemon juice - 1 tablespoon
- Fresh dill - 1 tablespoon, chopped
- Tomato - 1, sliced
- Red onion - 1/4, thinly sliced
Steps
- Preheat a grill or grill pan over medium-high heat.
- In a bowl, mix olive oil, dried oregano, garlic powder, salt, and black pepper.
- Brush the eggplant slices with the olive oil mixture on both sides.
- Grill the eggplant slices for about 5-7 minutes on each side or until they are tender and have grill marks.
