Ingredients

  • Eggplant - 1 medium (about 300g)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh mint - 1/4 cup, chopped
  • Almond flour - 1 cup
  • Egg - 1 large
  • Sea salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 50g, crumbled (optional for non-Paleo)
  • Cherry tomatoes - 100g, halved
  • Zucchini - 1 small, sliced

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant into 1 cm rounds and sprinkle with salt. Let it sit for 10 minutes to draw out moisture.
  3. Rinse the eggplant slices under cold water and pat them dry with paper towels.
  4. In a bowl, mix the almond flour, egg, olive oil, sea salt, and black pepper to form a dough.
  5. Press the dough into a round pizza shape on a baking sheet lined with parchment paper.
  6. Brush the eggplant slices with olive oil and roast in the oven for about 20 minutes until tender and slightly golden.
  7. In a skillet, heat a little olive oil and sauté the minced garlic until fragrant, then add the chopped mint and remove from heat.
  8. Spread the sautéed garlic and mint mixture over the baked almond flour crust.
  9. Layer the roasted eggplant, cherry tomatoes, and zucchini slices evenly on top.
  10. If using, sprinkle the crumbled feta cheese over the top.
  11. Return the pizza to the oven and bake for an additional 10-15 minutes until the vegetables are cooked and the crust is golden.
  12. Remove from the oven, let cool slightly, slice, and serve warm.
