- Cherry tomatoes - 100 grams, halved
- Feta cheese - 100 grams, crumbled
- Fresh oregano - 1 tablespoon, chopped
- Salt - to taste

- Mozzarella cheese - 50 grams, shredded
Steps
- Preheat the oven to 220°C (428°F).
- In a bowl, toss the sliced eggplant with 1 tablespoon of olive oil, minced garlic, salt, and black pepper. Spread the eggplant slices on a baking sheet and roast for 15 minutes until tender and slightly caramelized.
