Ingredients
- Grape leaves - 12 pieces
- Ground lamb - 200 grams
- Cauliflower rice - 100 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh dill - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
- In a large mixing bowl, combine the ground lamb, cauliflower rice, sautéed onion and garlic, dill, parsley, lemon juice, salt, and black pepper. Mix well until combined.
- Lay a grape leaf flat on a clean surface, stem side facing you. Place about 1-2 tablespoons of the filling near the stem end and fold the sides over the filling. Roll tightly from the stem end to the tip, ensuring the filling is secure.
- Repeat with remaining grape leaves and filling.
- Place the wrapped dolmades seam-side down in a baking dish. Drizzle with remaining olive oil and add a splash of water to the bottom of the dish to create steam.
- Cover the dish with aluminum foil and bake for 25-30 minutes, until the dolmades are cooked through.
- Remove from the oven and let cool slightly before serving.
