Ingredients

  • Grape leaves - 12 pieces
  • Ground lamb - 200 grams
  • Cauliflower rice - 100 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh dill - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
  3. In a large mixing bowl, combine the ground lamb, cauliflower rice, sautéed onion and garlic, dill, parsley, lemon juice, salt, and black pepper. Mix well until combined.
  4. Lay a grape leaf flat on a clean surface, stem side facing you. Place about 1-2 tablespoons of the filling near the stem end and fold the sides over the filling. Roll tightly from the stem end to the tip, ensuring the filling is secure.
  5. Repeat with remaining grape leaves and filling.
  6. Place the wrapped dolmades seam-side down in a baking dish. Drizzle with remaining olive oil and add a splash of water to the bottom of the dish to create steam.
  7. Cover the dish with aluminum foil and bake for 25-30 minutes, until the dolmades are cooked through.
  8. Remove from the oven and let cool slightly before serving.
