Ingredients

  • Grape leaves - 250g (about 20-25 leaves)
  • Ground beef - 200g
  • Cauliflower rice - 100g
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tbsp, chopped
  • Fresh dill - 1 tbsp, chopped
  • Olive oil - 2 tbsp
  • Lemon juice - 1 tbsp
  • Salt - 1 tsp
  • Black pepper - 1/2 tsp
  • Cinnamon - 1/4 tsp
  • Paprika - 1/2 tsp

Steps

  1. Prepare the grape leaves by rinsing them under cold water and blanching in boiling water for 2-3 minutes until soft. Drain and set aside.
  2. In a large mixing bowl, combine the ground beef, cauliflower rice, chopped onion, minced garlic, parsley, dill, olive oil, lemon juice, salt, black pepper, cinnamon, and paprika. Mix well until all ingredients are evenly incorporated.
  3. Lay a grape leaf on a flat surface with the stem end facing you. Place a tablespoon of the meat mixture at the base of the leaf, fold in the sides, and roll tightly from the base to the tip. Repeat with remaining leaves and filling.
  4. In a large pot, arrange the dolmades seam-side down. Add enough water to cover them halfway and drizzle with a bit of olive oil. Place a plate on top to keep them submerged.
  5. Cover the pot and simmer on low heat for 45 minutes until the meat is cooked through and the grape leaves are tender.
  6. Remove from heat, let cool slightly, and serve with additional lemon wedges if desired.
