Ingredients

  • Long-grain rice - 150 grams
  • Water - 300 ml
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Pine nuts - 30 grams, toasted

Steps

  1. Rinse the rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.
  3. Add the rinsed rice to the saucepan and stir for 2 minutes to toast the rice slightly.
  4. Pour in the water and add salt and black pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes.
  5. Once the rice is cooked, remove it from the heat and let it sit covered for 5 minutes.
  6. Fluff the rice with a fork, then mix in the chopped parsley, dill, lemon juice, and toasted pine nuts.
  7. Serve warm as a side dish or light main course.
