Ingredients
- Long-grain rice - 150 grams
- Water - 300 ml
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Fresh dill - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Pine nuts - 30 grams, toasted
Steps
- Rinse the rice under cold water until the water runs clear, then drain.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.
- Add the rinsed rice to the saucepan and stir for 2 minutes to toast the rice slightly.
- Pour in the water and add salt and black pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes.
- Once the rice is cooked, remove it from the heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork, then mix in the chopped parsley, dill, lemon juice, and toasted pine nuts.
- Serve warm as a side dish or light main course.
