- Pizza dough - 200 grams

- Garlic - 2 cloves, minced
- Rice (short-grain or arborio) - 100 grams
- Vegetable broth - 250 milliliters
- Dill (fresh) - 2 tablespoons, chopped
- Parsley (fresh) - 2 tablespoons, chopped
- Mint (fresh) - 1 tablespoon, chopped
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Pepper - 1/2 teaspoon
- Tomato sauce - 100 grams
- Feta cheese - 50 grams, crumbled
- Black olives - 30 grams, sliced
Steps
- Preheat the oven to 220°C (428°F).
- In a saucepan, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
- Add the rice to the saucepan and stir for 2 minutes, then pour in the vegetable broth. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes or until the rice is tender and liquid is absorbed.
- Remove from heat and stir in the dill, parsley, mint, lemon juice, salt, and pepper. Let the mixture cool slightly.
- Roll out the pizza dough on a floured surface to your desired thickness and shape, then transfer it to a baking sheet lined with parchment paper.
- Spread the tomato sauce evenly over the pizza dough, leaving a small border around the edges.
- Spoon the rice filling over the tomato sauce, spreading it evenly.
- Sprinkle the crumbled feta cheese and sliced olives on top of the filling.
- Drizzle the remaining tablespoon of olive oil over the pizza.
- Bake in the preheated oven for 15-20 minutes, or until the crust is golden and crispy.
- Remove from the oven and allow to cool for a few minutes before slicing and serving.
