Ingredients

  • Pizza dough - 200 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Rice (short-grain or arborio) - 100 grams
  • Vegetable broth - 250 milliliters
  • Dill (fresh) - 2 tablespoons, chopped
  • Parsley (fresh) - 2 tablespoons, chopped
  • Mint (fresh) - 1 tablespoon, chopped
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Pepper - 1/2 teaspoon
  • Tomato sauce - 100 grams
  • Feta cheese - 50 grams, crumbled
  • Black olives - 30 grams, sliced

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a saucepan, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
  3. Add the rice to the saucepan and stir for 2 minutes, then pour in the vegetable broth. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes or until the rice is tender and liquid is absorbed.
  4. Remove from heat and stir in the dill, parsley, mint, lemon juice, salt, and pepper. Let the mixture cool slightly.
  5. Roll out the pizza dough on a floured surface to your desired thickness and shape, then transfer it to a baking sheet lined with parchment paper.
  6. Spread the tomato sauce evenly over the pizza dough, leaving a small border around the edges.
  7. Spoon the rice filling over the tomato sauce, spreading it evenly.
  8. Sprinkle the crumbled feta cheese and sliced olives on top of the filling.
  9. Drizzle the remaining tablespoon of olive oil over the pizza.
  10. Bake in the preheated oven for 15-20 minutes, or until the crust is golden and crispy.
