Ingredients

  • Grape leaves - 200 grams (about 20 leaves)
  • Ground lamb - 200 grams
  • Cauliflower rice - 100 grams
  • Onion, finely chopped - 1 small (about 50 grams)
  • Garlic, minced - 2 cloves
  • Fresh mint, chopped - 2 tablespoons
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. In a skillet, heat 1 tablespoon of olive oil and sauté the chopped onion and garlic until translucent.
  2. In a bowl, combine ground lamb, cauliflower rice, sautéed onion and garlic, mint, parsley, lemon juice, salt, and pepper. Mix well until all ingredients are fully incorporated.
  3. Lay a grape leaf flat on a clean surface, with the stem end facing you. Place a tablespoon of the filling at the base of the leaf and fold in the sides, then roll tightly from the bottom up to form a small cylinder.
  4. Repeat with remaining grape leaves and filling.
  5. In a large pot, layer the bottom with unused grape leaves to prevent sticking. Place the stuffed dolmades seam side down in the pot, packing them closely together.
  6. Drizzle the remaining olive oil over the dolmades, and add enough water to cover them halfway. Place a plate on top to weigh them down.
  7. Cover the pot and simmer on low heat for 30-40 minutes, until the grape leaves are tender and the filling is cooked through.
  8. Remove from heat and let cool slightly before serving. Drizzle with additional lemon juice if desired.
