Ingredients
- Grape leaves - 200 grams (about 20 leaves)
- Ground lamb - 200 grams
- Cauliflower rice - 100 grams
- Onion, finely chopped - 1 small (about 50 grams)
- Garlic, minced - 2 cloves
- Fresh mint, chopped - 2 tablespoons
- Fresh parsley, chopped - 2 tablespoons
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- In a skillet, heat 1 tablespoon of olive oil and sauté the chopped onion and garlic until translucent.
- In a bowl, combine ground lamb, cauliflower rice, sautéed onion and garlic, mint, parsley, lemon juice, salt, and pepper. Mix well until all ingredients are fully incorporated.
- Lay a grape leaf flat on a clean surface, with the stem end facing you. Place a tablespoon of the filling at the base of the leaf and fold in the sides, then roll tightly from the bottom up to form a small cylinder.
- Repeat with remaining grape leaves and filling.
- In a large pot, layer the bottom with unused grape leaves to prevent sticking. Place the stuffed dolmades seam side down in the pot, packing them closely together.
- Drizzle the remaining olive oil over the dolmades, and add enough water to cover them halfway. Place a plate on top to weigh them down.
- Cover the pot and simmer on low heat for 30-40 minutes, until the grape leaves are tender and the filling is cooked through.
- Remove from heat and let cool slightly before serving. Drizzle with additional lemon juice if desired.
