Ingredients

  • Grape leaves - 200 grams (approx. 20 leaves)
  • Short-grain rice - 100 grams
  • Onion - 1 medium, finely chopped
  • Olive oil - 3 tablespoons
  • Fresh dill - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Mint - 1 tablespoon, chopped
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 250 ml (1 cup)

Steps

  1. Rinse the grape leaves under cold water and soak them in hot water for 15 minutes to soften.
  2. In a saucepan, heat 2 tablespoons of olive oil over medium heat and sauté the chopped onion until translucent.
  3. Add the rice to the saucepan and stir for 2-3 minutes, allowing it to toast slightly.
  4. Pour in the vegetable broth, add salt, black pepper, dill, parsley, and mint, then bring to a simmer. Cover and cook for about 15 minutes or until the rice is tender and the liquid is absorbed.
  5. Remove the mixture from heat and stir in the lemon juice. Allow it to cool slightly.
  6. Lay a grape leaf flat on a clean surface, shiny side down. Place about 1 tablespoon of the rice mixture at the base of the leaf, fold in the sides, and roll tightly from the base to the tip. Repeat with remaining leaves and filling.
  7. In a large pot, layer any leftover grape leaves at the bottom to prevent sticking. Arrange the stuffed dolmadakia seam side down in the pot.
  8. Drizzle the remaining olive oil over the dolmadakia and add enough water to cover them. Place a plate on top to keep them submerged while cooking.
  9. Cover the pot and simmer on low heat for about 30 minutes. Allow to cool slightly before serving.
