Ingredients
- Grape leaves - 200 grams (approx. 20 leaves)
- Short-grain rice - 100 grams
- Onion - 1 medium, finely chopped
- Olive oil - 3 tablespoons
- Fresh dill - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Mint - 1 tablespoon, chopped
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 250 ml (1 cup)
Steps
- Rinse the grape leaves under cold water and soak them in hot water for 15 minutes to soften.
- In a saucepan, heat 2 tablespoons of olive oil over medium heat and sauté the chopped onion until translucent.
- Add the rice to the saucepan and stir for 2-3 minutes, allowing it to toast slightly.
- Pour in the vegetable broth, add salt, black pepper, dill, parsley, and mint, then bring to a simmer. Cover and cook for about 15 minutes or until the rice is tender and the liquid is absorbed.
- Remove the mixture from heat and stir in the lemon juice. Allow it to cool slightly.
- Lay a grape leaf flat on a clean surface, shiny side down. Place about 1 tablespoon of the rice mixture at the base of the leaf, fold in the sides, and roll tightly from the base to the tip. Repeat with remaining leaves and filling.
- In a large pot, layer any leftover grape leaves at the bottom to prevent sticking. Arrange the stuffed dolmadakia seam side down in the pot.
- Drizzle the remaining olive oil over the dolmadakia and add enough water to cover them. Place a plate on top to keep them submerged while cooking.
- Cover the pot and simmer on low heat for about 30 minutes. Allow to cool slightly before serving.
