Ingredients

  • Grape leaves - 10 large, jarred or fresh
  • Ground lamb - 200 grams
  • Cauliflower rice - 100 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh dill - 1 tablespoon, chopped
  • Fresh parsley - 1 tablespoon, chopped
  • Lemon juice - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chicken broth - 250 ml

Steps

  1. If using jarred grape leaves, rinse them well under cold water and set aside. If using fresh leaves, blanch in boiling water for 2-3 minutes until pliable.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add chopped onion and garlic, sautéing until translucent.
  3. In a mixing bowl, combine the ground lamb, cauliflower rice, sautéed onion and garlic, dill, parsley, lemon juice, salt, and black pepper. Mix until well combined.
  4. Lay a grape leaf flat on a clean surface, vein side up. Place a tablespoon of the filling near the stem end of the leaf. Fold the sides over the filling and roll tightly from the stem end to the tip.
  5. Repeat the process with the remaining grape leaves and filling.
  6. In a large pot, arrange the stuffed grape leaves seam side down in a single layer. Pour the chicken broth over them and drizzle with the remaining olive oil.
  7. Cover the pot and bring to a simmer over medium heat. Cook for about 30-35 minutes, until the leaves are tender.
  8. Remove from heat and let them cool for a few minutes before serving. Serve warm or at room temperature.
