Ingredients
- Grape leaves - 10 large, jarred or fresh
- Ground lamb - 200 grams
- Cauliflower rice - 100 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh dill - 1 tablespoon, chopped
- Fresh parsley - 1 tablespoon, chopped
- Lemon juice - 1 tablespoon
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chicken broth - 250 ml
Steps
- If using jarred grape leaves, rinse them well under cold water and set aside. If using fresh leaves, blanch in boiling water for 2-3 minutes until pliable.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add chopped onion and garlic, sautéing until translucent.
- In a mixing bowl, combine the ground lamb, cauliflower rice, sautéed onion and garlic, dill, parsley, lemon juice, salt, and black pepper. Mix until well combined.
- Lay a grape leaf flat on a clean surface, vein side up. Place a tablespoon of the filling near the stem end of the leaf. Fold the sides over the filling and roll tightly from the stem end to the tip.
- Repeat the process with the remaining grape leaves and filling.
- In a large pot, arrange the stuffed grape leaves seam side down in a single layer. Pour the chicken broth over them and drizzle with the remaining olive oil.
- Cover the pot and bring to a simmer over medium heat. Cook for about 30-35 minutes, until the leaves are tender.
- Remove from heat and let them cool for a few minutes before serving. Serve warm or at room temperature.
