Ingredients
- Vine leaves - 12 pieces (jarred or fresh)
- Long-grain rice - 100 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh dill - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 250 milliliters
Steps
- Rinse the rice under cold water until the water runs clear, then drain.
- In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the rinsed rice to the skillet and stir for 2-3 minutes until slightly toasted.
- Stir in the chopped dill, parsley, salt, black pepper, and 150 milliliters of vegetable broth. Bring to a simmer, cover, and cook for about 10-12 minutes until the rice has absorbed most of the liquid. Remove from heat and let it cool slightly.
- Prepare the vine leaves by rinsing them briefly under cold water if using jarred ones. If using fresh, blanch them in boiling water for 1-2 minutes to soften.
- Lay a vine leaf, vein side up, on a flat surface. Place a spoonful of the rice mixture at the base of the leaf, fold in the sides, and roll tightly from the base to the tip to form a dolma. Repeat with the remaining leaves and filling.
- In a large pot, arrange the stuffed vine leaves seam side down. Pour the remaining vegetable broth and drizzle with 2 tablespoons of olive oil and lemon juice over the dolmadakia.
- Cover the pot with a lid and simmer on low heat for about 20-25 minutes until the vine leaves are tender and the rice is fully cooked.
- Serve warm or at room temperature, drizzled with additional lemon juice if desired.
