Ingredients

  • Vine leaves - 12 pieces (jarred or fresh)
  • Long-grain rice - 100 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh dill - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 250 milliliters

Steps

  1. Rinse the rice under cold water until the water runs clear, then drain.
  2. In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the rinsed rice to the skillet and stir for 2-3 minutes until slightly toasted.
  4. Stir in the chopped dill, parsley, salt, black pepper, and 150 milliliters of vegetable broth. Bring to a simmer, cover, and cook for about 10-12 minutes until the rice has absorbed most of the liquid. Remove from heat and let it cool slightly.
  5. Prepare the vine leaves by rinsing them briefly under cold water if using jarred ones. If using fresh, blanch them in boiling water for 1-2 minutes to soften.
  6. Lay a vine leaf, vein side up, on a flat surface. Place a spoonful of the rice mixture at the base of the leaf, fold in the sides, and roll tightly from the base to the tip to form a dolma. Repeat with the remaining leaves and filling.
  7. In a large pot, arrange the stuffed vine leaves seam side down. Pour the remaining vegetable broth and drizzle with 2 tablespoons of olive oil and lemon juice over the dolmadakia.
  8. Cover the pot with a lid and simmer on low heat for about 20-25 minutes until the vine leaves are tender and the rice is fully cooked.
  9. Serve warm or at room temperature, drizzled with additional lemon juice if desired.
