Diples are a traditional Greek dessert, transformed into a vegan delight that's crispy, sweet, and perfect for any occasion. These thin, rolled pastries are drizzled with a fragrant syrup, offering a delightful crunch and a burst of flavor in every bite.

Ingredients
- All-purpose flour - 150 grams
- Water - 75 ml
- Olive oil - 30 ml
- Corn starch - 20 grams
- Vanilla extract - 1 teaspoon
- Sugar - 100 grams
- Lemon juice - 1 tablespoon
- Cinnamon - 1 teaspoon
- Chopped walnuts - 50 grams
- Powdered sugar - for dusting
Steps
- In a mixing bowl, combine the all-purpose flour, corn starch, and a pinch of salt.
- Add the water, olive oil, and vanilla extract. Mix until a smooth dough forms.
- Knead the dough for about 5 minutes until it becomes elastic. Cover and let it rest for 30 minutes.
- While the dough is resting, prepare the syrup by combining the sugar, lemon juice, and 100 ml of water in a saucepan. Heat over medium until the sugar dissolves, then add the cinnamon. Simmer for 5 minutes and set aside to cool.
- After resting, divide the dough into 4 equal pieces. Roll each piece very thinly on a floured surface.
- Cut the rolled dough into strips about 5 cm wide and 15 cm long.
- Heat a deep pan with oil for frying. Once hot, fry the strips until golden brown on both sides, about 1-2 minutes per side. Remove and drain on paper towels.
- While still warm, roll each fried strip into a spiral shape and secure with a toothpick if necessary.
- Drizzle the cooled syrup over the warm diples and sprinkle with chopped walnuts and powdered sugar before serving.
