Ingredients

  • Coconut yogurt - 200 grams

  • Lemon juice - 1 tablespoon

  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pasta (e.g., penne or fusilli) - 150 grams
  • Cherry tomatoes - 100 grams, halved
  • Kalamata olives - 50 grams, pitted and sliced

Steps

  1. Cook the pasta according to package instructions until al dente, then drain and set aside.
  2. In a mixing bowl, combine the grated cucumber with a pinch of salt and let it sit for 5 minutes to draw out excess moisture.
  3. In another bowl, mix the coconut yogurt, minced garlic, chopped dill, lemon juice, olive oil, black pepper, and the drained cucumber until well combined.
  4. In a large bowl, toss the cooked pasta with the tzatziki sauce until evenly coated.
