Ingredients

  • Whole wheat pasta - 150 grams
  • Firm tofu - 200 grams, drained and pressed
  • Red bell pepper - 1, chopped
  • Zucchini - 1, sliced
  • Red onion - 1, cut into wedges
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
  2. In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to create a marinade.
  3. Cut the pressed tofu into bite-sized cubes and add it to the marinade. Let it sit for at least 10 minutes to absorb the flavors.
  4. Preheat a grill pan or skillet over medium heat. Add the marinated tofu and grill for about 5-7 minutes on each side until golden and crispy.
  5. In the same pan, add the chopped red bell pepper, sliced zucchini, and red onion. Sauté for 5-7 minutes until the vegetables are tender but still crisp.
  6. In a large bowl, combine the cooked pasta, grilled tofu, and sautéed vegetables. Toss everything together gently.
  7. Garnish with chopped fresh parsley before serving.
