- Whole wheat pasta - 150 grams
- Firm tofu - 200 grams, drained and pressed
- Red bell pepper - 1, chopped
- Zucchini - 1, sliced
- Red onion - 1, cut into wedges
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 2 cloves, minced
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
- In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to create a marinade.
- Cut the pressed tofu into bite-sized cubes and add it to the marinade. Let it sit for at least 10 minutes to absorb the flavors.
- Preheat a grill pan or skillet over medium heat. Add the marinated tofu and grill for about 5-7 minutes on each side until golden and crispy.
- In the same pan, add the chopped red bell pepper, sliced zucchini, and red onion. Sauté for 5-7 minutes until the vegetables are tender but still crisp.
- In a large bowl, combine the cooked pasta, grilled tofu, and sautéed vegetables. Toss everything together gently.
- Garnish with chopped fresh parsley before serving.
