Ingredients

  • Eggplant - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Potato - 1 medium, sliced
  • Olive oil - 3 tablespoons
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Ground beef (or lentils for a vegan option) - 200 grams
  • Canned diced tomatoes - 400 grams
  • Tomato paste - 2 tablespoons
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Nutmeg - 1/4 teaspoon
  • Almond milk - 250 ml
  • Cornstarch - 2 tablespoons
  • Nutritional yeast - 3 tablespoons
  • Breadcrumbs - 2 tablespoons (optional, for topping)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant, zucchini, and potato into thin rounds. Sprinkle with salt and let them sit for 15 minutes to draw out moisture, then pat dry.
  3. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft.
  4. Add the ground beef (or lentils) to the skillet and cook until browned. Stir in the canned diced tomatoes, tomato paste, oregano, salt, and black pepper. Let simmer for 10 minutes.
  5. In a separate saucepan, whisk together almond milk and cornstarch over medium heat until thickened. Stir in nutritional yeast and nutmeg, then remove from heat.
  6. In a greased baking dish, layer the potato slices at the bottom, followed by half of the eggplant and zucchini slices. Spread half of the meat sauce over the vegetables, then repeat with the remaining vegetables and meat sauce.
  7. Pour the almond milk béchamel over the top layer. Sprinkle breadcrumbs on top if using.
  8. Drizzle the remaining olive oil over the dish and bake for 30-35 minutes, or until golden brown and bubbly.
  9. Remove from the oven and let it sit for 10 minutes before serving.
