- Garlic - 2 cloves, minced
- Mushrooms - 150 grams, sliced
- Spinach - 100 grams, fresh
- Chickpeas - 100 grams, canned, drained and rinsed
- Nutritional yeast - 3 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Cook the gluten-free pasta according to package instructions until al dente, then drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and sliced mushrooms, cooking for another 5 minutes until the mushrooms are tender.
- Add the fresh spinach and drained chickpeas to the skillet, cooking until the spinach wilts, about 2-3 minutes.
- Incorporate the cooked pasta into the skillet, mixing well with the vegetable mixture.
- Sprinkle in the nutritional yeast, salt, black pepper, paprika, and chopped parsley. Stir to combine all ingredients thoroughly.
- Remove from heat and drizzle with lemon juice before serving.
