  • Mushrooms - 150 grams, sliced
  • Spinach - 100 grams, fresh
  • Chickpeas - 100 grams, canned, drained and rinsed
  • Nutritional yeast - 3 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Cook the gluten-free pasta according to package instructions until al dente, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and sliced mushrooms, cooking for another 5 minutes until the mushrooms are tender.
  4. Add the fresh spinach and drained chickpeas to the skillet, cooking until the spinach wilts, about 2-3 minutes.
  5. Incorporate the cooked pasta into the skillet, mixing well with the vegetable mixture.
  6. Sprinkle in the nutritional yeast, salt, black pepper, paprika, and chopped parsley. Stir to combine all ingredients thoroughly.
