Ingredients

  • Cucumber - 1 large
  • Feta cheese - 100 grams
  • Greek yogurt - 2 tablespoons
  • Fresh dill - 1 tablespoon, chopped
  • Fresh mint - 1 tablespoon, chopped
  • Lemon juice - 1 tablespoon
  • Olive oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Cherry tomatoes - 4, halved (for garnish)

Steps

  1. Wash the cucumber and slice it lengthwise into thin strips using a mandoline or a sharp knife.
  2. In a bowl, combine the feta cheese, Greek yogurt, chopped dill, chopped mint, lemon juice, olive oil, salt, and black pepper. Mix until well combined and creamy.
  3. Take a cucumber strip and place a spoonful of the feta mixture at one end. Roll it up tightly and secure with a toothpick if necessary.
  4. Repeat with the remaining cucumber strips and filling until all are rolled.
  5. Arrange the cucumber rolls on a serving plate and garnish with halved cherry tomatoes.
