- Cucumber - 1 large
- Feta cheese - 100 grams
- Greek yogurt - 2 tablespoons
- Fresh dill - 1 tablespoon, chopped
- Fresh mint - 1 tablespoon, chopped
- Lemon juice - 1 tablespoon
- Olive oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Cherry tomatoes - 4, halved (for garnish)
Steps
- Wash the cucumber and slice it lengthwise into thin strips using a mandoline or a sharp knife.
- In a bowl, combine the feta cheese, Greek yogurt, chopped dill, chopped mint, lemon juice, olive oil, salt, and black pepper. Mix until well combined and creamy.
- Take a cucumber strip and place a spoonful of the feta mixture at one end. Roll it up tightly and secure with a toothpick if necessary.
- Repeat with the remaining cucumber strips and filling until all are rolled.
- Arrange the cucumber rolls on a serving plate and garnish with halved cherry tomatoes.
