- Celery - 1 stalk, diced
- Zucchini - 1 medium, diced
- Potato - 1 medium, diced
- Green bell pepper - 1/2, diced
- Tomatoes - 2 medium, chopped
- Vegetable broth - 500 ml
- Bay leaf - 1
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Stir in the diced carrot and celery, cooking for an additional 5 minutes until slightly softened.
- Add the diced zucchini, potato, and green bell pepper, cooking for another 5 minutes.
- Mix in the chopped tomatoes, vegetable broth, bay leaf, dried oregano, salt, and black pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low and let the soup simmer for 15-20 minutes, or until the vegetables are tender.
- Remove the bay leaf and stir in the fresh parsley and lemon juice before serving.
