Ingredients

  • Cucumber - 1 medium, diced

  • Kalamata olives - 100 grams, pitted
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 1 tablespoon, chopped
  • Olive oil - 3 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Wash and prepare all the vegetables: dice the cucumber and tomatoes, dice the red bell pepper, and thinly slice the red onion.
  2. In a large salad bowl, combine the diced cucumber, tomatoes, bell pepper, and red onion.
