- Whole wheat pita bread - 2 pieces
- Cherry tomatoes - 200 grams, halved
- Cucumber - 100 grams, diced
- Kalamata olives - 50 grams, pitted and sliced
- Feta cheese - 100 grams, crumbled
- Extra virgin olive oil - 2 tablespoons
- Dried oregano - 1 teaspoon
- Fresh basil - a handful, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- Place the whole wheat pita bread on a baking sheet.
- Drizzle 1 tablespoon of extra virgin olive oil over each pita and sprinkle with salt, black pepper, and half of the dried oregano.
- Bake the pita in the oven for about 5-7 minutes until they are crispy and slightly golden.
- In a mixing bowl, combine the cherry tomatoes, cucumber, Kalamata olives, crumbled feta cheese, chopped basil, remaining olive oil, and the rest of the dried oregano. Toss gently to combine.
- Once the pita is crispy, remove it from the oven and let it cool for a minute.
- Top each pita with the tomato and feta mixture evenly.
