Ingredients

  • Whole wheat pita bread - 2 pieces
  • Cherry tomatoes - 200 grams, halved
  • Cucumber - 100 grams, diced
  • Kalamata olives - 50 grams, pitted and sliced
  • Feta cheese - 100 grams, crumbled
  • Extra virgin olive oil - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Fresh basil - a handful, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Place the whole wheat pita bread on a baking sheet.
  3. Drizzle 1 tablespoon of extra virgin olive oil over each pita and sprinkle with salt, black pepper, and half of the dried oregano.
  4. Bake the pita in the oven for about 5-7 minutes until they are crispy and slightly golden.
  5. In a mixing bowl, combine the cherry tomatoes, cucumber, Kalamata olives, crumbled feta cheese, chopped basil, remaining olive oil, and the rest of the dried oregano. Toss gently to combine.
  6. Once the pita is crispy, remove it from the oven and let it cool for a minute.
  7. Top each pita with the tomato and feta mixture evenly.
