Ingredients
- couscous - 100 grams
- water - 200 ml
- feta cheese - 100 grams, crumbled
- fresh parsley - 30 grams, chopped
- fresh mint - 15 grams, chopped
- garlic - 1 clove, minced
- egg - 1 large
- bread crumbs - 50 grams
- olive oil - 1 tablespoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- whole wheat burger buns - 2
- Greek yogurt - 100 grams
- lemon juice - 1 tablespoon
- cucumber - 50 grams, grated
- dried oregano - 1/2 teaspoon
Steps
- In a saucepan, bring 200 ml of water to a boil, add 100 grams of couscous, cover, and remove from heat. Let it sit for 5 minutes to absorb the water.
- Fluff the couscous with a fork and allow it to cool slightly.
- In a mixing bowl, combine the cooled couscous, crumbled feta cheese, chopped parsley, chopped mint, minced garlic, egg, bread crumbs, salt, and black pepper. Mix well until combined.
- Form the mixture into 2 equal-sized patties.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, prepare the yogurt sauce by mixing Greek yogurt, lemon juice, grated cucumber, and dried oregano in a small bowl. Season with salt to taste.
- Toast the whole wheat burger buns in the skillet for a minute or until golden.
- Assemble the burgers by placing the couscous-feta patties on the buns and topping with the yogurt sauce.
