Ingredients

  • couscous - 100 grams
  • water - 200 ml
  • feta cheese - 100 grams, crumbled
  • fresh parsley - 30 grams, chopped
  • fresh mint - 15 grams, chopped
  • garlic - 1 clove, minced
  • egg - 1 large
  • bread crumbs - 50 grams
  • olive oil - 1 tablespoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • whole wheat burger buns - 2
  • Greek yogurt - 100 grams
  • lemon juice - 1 tablespoon
  • cucumber - 50 grams, grated
  • dried oregano - 1/2 teaspoon

Steps

  1. In a saucepan, bring 200 ml of water to a boil, add 100 grams of couscous, cover, and remove from heat. Let it sit for 5 minutes to absorb the water.
  2. Fluff the couscous with a fork and allow it to cool slightly.
  3. In a mixing bowl, combine the cooled couscous, crumbled feta cheese, chopped parsley, chopped mint, minced garlic, egg, bread crumbs, salt, and black pepper. Mix well until combined.
  4. Form the mixture into 2 equal-sized patties.
  5. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
  6. While the patties are cooking, prepare the yogurt sauce by mixing Greek yogurt, lemon juice, grated cucumber, and dried oregano in a small bowl. Season with salt to taste.
  7. Toast the whole wheat burger buns in the skillet for a minute or until golden.
  8. Assemble the burgers by placing the couscous-feta patties on the buns and topping with the yogurt sauce.
