Ingredients

  • Coconut flour - 1/2 cup
  • Eggs - 2 large
  • Olive oil - 1 tablespoon
  • Sea salt - 1/2 teaspoon
  • Water - 2 tablespoons
  • Fresh basil - 1/4 cup, chopped
  • Cherry tomatoes - 1 cup, halved
  • Feta cheese - 50 grams, crumbled
  • Black olives - 1/4 cup, sliced
  • Garlic - 2 cloves, minced

Steps

  1. In a mixing bowl, combine coconut flour and sea salt. Create a well in the center and add eggs, olive oil, and water.
  2. Mix the ingredients until a dough forms. If the dough is too crumbly, add a little more water, one teaspoon at a time.
  3. Knead the dough for about 2-3 minutes until it becomes smooth. Let it rest for 10 minutes covered with a damp cloth.
  4. Roll out the dough between two sheets of parchment paper to about 1/8 inch thick. Cut into your desired pasta shape.
  5. In a large pot, bring salted water to a boil. Cook the pasta for 3-4 minutes until it floats and is tender.
  6. While the pasta cooks, heat a skillet over medium heat and add olive oil. Sauté minced garlic until fragrant.
  7. Add cherry tomatoes and black olives to the skillet, cooking until the tomatoes soften, about 3-4 minutes.
  8. Drain the pasta and add it to the skillet with the tomato mixture. Toss to combine and heat through.
  9. Remove from heat and stir in fresh basil and crumbled feta cheese. Serve warm.
