Ingredients
- Coconut flour - 1/2 cup
- Eggs - 2 large
- Olive oil - 1 tablespoon
- Sea salt - 1/2 teaspoon
- Water - 2 tablespoons
- Fresh basil - 1/4 cup, chopped
- Cherry tomatoes - 1 cup, halved
- Feta cheese - 50 grams, crumbled
- Black olives - 1/4 cup, sliced
- Garlic - 2 cloves, minced
Steps
- In a mixing bowl, combine coconut flour and sea salt. Create a well in the center and add eggs, olive oil, and water.
- Mix the ingredients until a dough forms. If the dough is too crumbly, add a little more water, one teaspoon at a time.
- Knead the dough for about 2-3 minutes until it becomes smooth. Let it rest for 10 minutes covered with a damp cloth.
- Roll out the dough between two sheets of parchment paper to about 1/8 inch thick. Cut into your desired pasta shape.
- In a large pot, bring salted water to a boil. Cook the pasta for 3-4 minutes until it floats and is tender.
- While the pasta cooks, heat a skillet over medium heat and add olive oil. Sauté minced garlic until fragrant.
- Add cherry tomatoes and black olives to the skillet, cooking until the tomatoes soften, about 3-4 minutes.
- Drain the pasta and add it to the skillet with the tomato mixture. Toss to combine and heat through.
- Remove from heat and stir in fresh basil and crumbled feta cheese. Serve warm.
