Ingredients

  • Fresh clams - 500 grams
  • Ouzo - 100 ml
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Cherry tomatoes - 200 grams, halved
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the clams under cold water to remove any sand or grit, then soak them in fresh water for about 20 minutes.
  2. In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the cherry tomatoes to the pot and cook for another 3-4 minutes until they start to soften.
  4. Pour in the ouzo and bring to a gentle simmer, allowing the alcohol to cook off for about 2 minutes.
  5. Add the rinsed clams to the pot, cover, and cook for 5-7 minutes or until the clams have opened up. Discard any clams that do not open.
  6. Stir in the lemon juice, chopped parsley, salt, and black pepper to taste. Mix well.
  7. Serve the clams hot, garnished with additional parsley if desired.
