- Fresh clams - 500 grams
- Ouzo - 100 ml
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Cherry tomatoes - 200 grams, halved
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the clams under cold water to remove any sand or grit, then soak them in fresh water for about 20 minutes.
- In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the cherry tomatoes to the pot and cook for another 3-4 minutes until they start to soften.
- Pour in the ouzo and bring to a gentle simmer, allowing the alcohol to cook off for about 2 minutes.
- Add the rinsed clams to the pot, cover, and cook for 5-7 minutes or until the clams have opened up. Discard any clams that do not open.
- Stir in the lemon juice, chopped parsley, salt, and black pepper to taste. Mix well.
- Serve the clams hot, garnished with additional parsley if desired.
