- Fresh clams - 500 grams
- Zucchini - 2 medium, spiralized
- Garlic - 4 cloves, minced
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Red pepper flakes - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the clams under cold water to remove any sand and grit, then soak them in water for about 20 minutes if needed.
- In a large skillet, heat the olive oil over medium heat and add the minced garlic, cooking until fragrant (about 1 minute).
- Add the soaked clams to the skillet, along with the lemon juice, red pepper flakes, salt, and pepper. Cover the skillet and cook for about 5-7 minutes, or until the clams have opened.
- While the clams are cooking, prepare the spiralized zucchini in a separate pot of boiling water for about 2-3 minutes until slightly softened, then drain.
- Once the clams are open, remove the skillet from heat and stir in the chopped parsley.
- Toss the spiralized zucchini in with the clams, mixing gently to combine all the flavors.
- Serve immediately, garnished with additional parsley and a drizzle of olive oil if desired.
