Ingredients

  • Fresh clams - 500 grams
  • Zucchini - 2 medium, spiralized
  • Garlic - 4 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the clams under cold water to remove any sand and grit, then soak them in water for about 20 minutes if needed.
  2. In a large skillet, heat the olive oil over medium heat and add the minced garlic, cooking until fragrant (about 1 minute).
  3. Add the soaked clams to the skillet, along with the lemon juice, red pepper flakes, salt, and pepper. Cover the skillet and cook for about 5-7 minutes, or until the clams have opened.
  4. While the clams are cooking, prepare the spiralized zucchini in a separate pot of boiling water for about 2-3 minutes until slightly softened, then drain.
  5. Once the clams are open, remove the skillet from heat and stir in the chopped parsley.
  6. Toss the spiralized zucchini in with the clams, mixing gently to combine all the flavors.
  7. Serve immediately, garnished with additional parsley and a drizzle of olive oil if desired.
