- Fresh clams - 500 grams
- Cauliflower - 200 grams
- Zucchini - 100 grams
- Carrot - 50 grams
- Onion - 1 medium (about 100 grams)
- Garlic - 2 cloves
- Olive oil - 2 tablespoons
- Vegetable broth - 400 milliliters
- Dried oregano - 1 teaspoon
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse and scrub the clams thoroughly under cold water to remove any sand or grit.
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent.
- Add the diced carrot and zucchini to the pot, cooking for an additional 5 minutes until they begin to soften.
- Chop the cauliflower into small florets and add it to the pot along with the vegetable broth. Bring the mixture to a boil.
- Once boiling, reduce the heat to a simmer and add the clams, dried oregano, salt, and black pepper. Cover the pot and cook for about 10-15 minutes, or until the clams have opened.
- Remove the pot from heat and stir in the lemon juice. Discard any clams that haven't opened.
- Ladle the chowder into bowls and garnish with fresh parsley before serving.
