Ingredients

  • Fresh clams - 500 grams
  • Cauliflower - 200 grams
  • Zucchini - 100 grams
  • Carrot - 50 grams
  • Onion - 1 medium (about 100 grams)
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Vegetable broth - 400 milliliters
  • Dried oregano - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse and scrub the clams thoroughly under cold water to remove any sand or grit.
  2. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent.
  3. Add the diced carrot and zucchini to the pot, cooking for an additional 5 minutes until they begin to soften.
  4. Chop the cauliflower into small florets and add it to the pot along with the vegetable broth. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to a simmer and add the clams, dried oregano, salt, and black pepper. Cover the pot and cook for about 10-15 minutes, or until the clams have opened.
  6. Remove the pot from heat and stir in the lemon juice. Discard any clams that haven't opened.
  7. Ladle the chowder into bowls and garnish with fresh parsley before serving.
