Ingredients

  • Arborio rice - 100 grams
  • Milk - 500 ml
  • Water - 250 ml
  • Sugar - 50 grams
  • Cinnamon stick - 1
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Ground cinnamon - for garnish
  • Chopped nuts (optional) - 20 grams

Steps

  1. Rinse the Arborio rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice, milk, water, sugar, cinnamon stick, and a pinch of salt.
  3. Bring the mixture to a gentle boil over medium heat, stirring occasionally to prevent the rice from sticking.
  4. Once boiling, reduce the heat to low and simmer uncovered for about 20-25 minutes, stirring frequently, until the rice is tender and the pudding has thickened.
  5. Remove the saucepan from heat and stir in the vanilla extract. Discard the cinnamon stick.
  6. Divide the rice pudding into two bowls, and let it cool slightly before serving.
  7. Sprinkle ground cinnamon on top for garnish and add chopped nuts if desired.
