Ingredients

  • Basmati rice - 1 cup (200g)
  • Water - 2 cups (500ml)
  • Cinnamon stick - 1 piece
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Sugar - 1 tablespoon
  • Slivered almonds - 2 tablespoons
  • Raisins - 2 tablespoons
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, combine the rinsed rice, water, cinnamon stick, salt, and olive oil.
  3. Bring the mixture to a boil over medium-high heat, then reduce the heat to low and cover the saucepan.
  4. Simmer for 15-20 minutes, or until the rice is tender and the water is absorbed.
  5. In a separate small pan, lightly toast the slivered almonds over medium heat until golden brown, then set aside.
  6. Once the rice is cooked, remove it from heat and let it sit covered for 5 minutes, then fluff with a fork.
  7. Stir in the sugar, toasted almonds, and raisins until evenly distributed.
  8. Serve warm, garnished with chopped parsley.
