- Water - 2 cups (500ml)
- Cinnamon stick - 1 piece
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Sugar - 1 tablespoon
- Slivered almonds - 2 tablespoons
- Raisins - 2 tablespoons
- Fresh parsley - 1 tablespoon, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then drain.
- In a medium saucepan, combine the rinsed rice, water, cinnamon stick, salt, and olive oil.
- Bring the mixture to a boil over medium-high heat, then reduce the heat to low and cover the saucepan.
- Simmer for 15-20 minutes, or until the rice is tender and the water is absorbed.
- In a separate small pan, lightly toast the slivered almonds over medium heat until golden brown, then set aside.
- Once the rice is cooked, remove it from heat and let it sit covered for 5 minutes, then fluff with a fork.
- Stir in the sugar, toasted almonds, and raisins until evenly distributed.
