Ingredients

  • Pine nuts - 20 grams
  • Garlic - 1 clove
  • Lemon juice - 15 ml
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 50 grams, thinly sliced
  • Kalamata olives - 50 grams, pitted and halved
  • Fresh lemon zest - 1 teaspoon

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a food processor, combine cilantro, olive oil, pine nuts, garlic, lemon juice, salt, and black pepper. Blend until smooth to create the cilantro pesto.
  3. Roll out the pizza dough on a lightly floured surface to your desired thickness, then transfer it to a baking sheet or pizza stone.
  4. Spread the cilantro pesto evenly over the pizza dough, leaving a small border around the edges.
  5. Top the pizza with halved cherry tomatoes, sliced red onion, and Kalamata olives.
  6. Sprinkle fresh lemon zest on top of the pizza for added flavor.
  7. Bake in the preheated oven for about 12-15 minutes, or until the crust is golden and crispy.
