- Arborio rice - 150 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Fresh dill - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Spinach - 100 grams, chopped
- Chard or beet greens - 100 grams, chopped
- Vegetable broth - 500 ml
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Heat the olive oil in a medium saucepan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the Arborio rice to the saucepan, stirring for 2-3 minutes until the rice is well-coated with oil and slightly toasted.
- Pour in the vegetable broth and bring to a boil. Reduce the heat to low and cover the saucepan. Cook for 15 minutes.
- After 15 minutes, add the chopped spinach and chard or beet greens to the rice. Stir gently, cover, and cook for an additional 10 minutes until the greens are wilted and the rice is tender.
- Remove from heat and stir in the fresh dill, parsley, lemon juice, salt, and black pepper. Let it sit covered for 5 minutes before serving.
- Fluff the rice with a fork and serve warm, garnished with extra herbs if desired.
