Ingredients

  • Rice - 150 grams
  • Mixed wild greens (such as dandelion, nettles, or spinach) - 200 grams
  • Olive oil - 3 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh dill - 2 tablespoons, chopped
  • Water - 300 milliliters

Steps

  1. Rinse the rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rinsed rice and 300 milliliters of water. Bring to a boil, then reduce to a simmer, cover, and cook for 15-18 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.
  3. While the rice is cooking, heat 3 tablespoons of olive oil in a large skillet over medium heat.
  4. Add the chopped onion to the skillet and sauté for about 5 minutes until it becomes translucent.
  5. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  6. Stir in the mixed wild greens and cook for about 5-7 minutes, stirring occasionally, until they are wilted and tender.
  7. Season the greens with salt, black pepper, and lemon juice, mixing well.
  8. Remove the skillet from heat and stir in the chopped fresh dill.
  9. Fluff the cooked rice with a fork and serve it on plates topped with the sautéed wild greens mixture.
