Ingredients

  • Wild greens (e.g., dandelion, purslane, or spinach) - 200 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red onion - 1 small, thinly sliced
  • Feta cheese - 50 grams, crumbled (optional for Halal)
  • Kalamata olives - 10 olives, pitted and halved

Steps

  1. Wash the wild greens thoroughly under cold running water to remove any dirt or grit.
  2. Bring a pot of salted water to a boil and blanch the greens for about 2-3 minutes until just tender.
  3. Drain the greens and immediately transfer them to a bowl of ice water to stop the cooking process and retain their vibrant color.
  4. Once cooled, drain the greens again and gently squeeze out any excess water.
  5. In a large bowl, combine the olive oil, lemon juice, salt, and black pepper to make the dressing.
  6. Add the drained greens, sliced red onion, Kalamata olives, and feta cheese (if using) to the bowl.
  7. Toss gently to combine all the ingredients and coat them with the dressing.
  8. Serve immediately or let it sit for a few minutes to allow the flavors to meld.
