Ingredients

  • Pasta (penne or fusilli) - 150 grams
  • Cherry tomatoes - 200 grams, halved
  • Cucumber - 100 grams, diced
  • Kalamata olives - 50 grams, pitted and halved
  • Feta cheese - 100 grams, crumbled
  • Red onion - 50 grams, thinly sliced
  • Fresh parsley - 15 grams, chopped
  • Olive oil - 30 ml
  • Red wine vinegar - 15 ml
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large mixing bowl, combine the cherry tomatoes, cucumber, Kalamata olives, red onion, and parsley.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper to create a dressing.
