- Garlic - 3 cloves, minced
- Red bell pepper - 1 medium, chopped
- Zucchini - 1 medium, chopped
- Diced tomatoes - 400 grams, canned
- Vegetable broth - 250 ml
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
- Lemon juice - 1 tablespoon
Steps
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté for 5 minutes until translucent.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the chopped red bell pepper and zucchini, cooking for 5-7 minutes until softened.
- Stir in the rinsed chickpeas, diced tomatoes (with their juices), vegetable broth, ground cumin, paprika, salt, and black pepper.
- Bring the stew to a gentle simmer and cook for 15-20 minutes, allowing the flavors to meld.
- Remove from heat and stir in the lemon juice.
- Serve hot, garnished with fresh parsley.
