Ingredients

  • Canned chickpeas - 400 grams, rinsed and drained
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Red bell pepper - 1 medium, chopped
  • Zucchini - 1 medium, chopped
  • Diced tomatoes - 400 grams, canned
  • Vegetable broth - 250 ml
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)
  • Lemon juice - 1 tablespoon

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté for 5 minutes until translucent.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the chopped red bell pepper and zucchini, cooking for 5-7 minutes until softened.
  5. Stir in the rinsed chickpeas, diced tomatoes (with their juices), vegetable broth, ground cumin, paprika, salt, and black pepper.
  6. Bring the stew to a gentle simmer and cook for 15-20 minutes, allowing the flavors to meld.
  7. Remove from heat and stir in the lemon juice.
  8. Serve hot, garnished with fresh parsley.
