Ingredients

  • Canned chickpeas - 400 grams, drained and rinsed
  • Red bell pepper - 1 medium, chopped
  • Zucchini - 1 medium, diced
  • Red onion - 1 medium, chopped
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large mixing bowl, combine the drained chickpeas, chopped red bell pepper, diced zucchini, and chopped red onion.
  3. In a small bowl, whisk together the olive oil, minced garlic, dried oregano, paprika, salt, black pepper, and lemon juice.
  4. Pour the marinade over the chickpea and vegetable mixture, and toss until everything is well coated.
  5. Spread the mixture evenly on a baking sheet lined with parchment paper.
  6. Bake in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized.
