- Zucchini - 1 medium, diced
- Red onion - 1 medium, chopped
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Dried oregano - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 200°C (400°F).
- In a large mixing bowl, combine the drained chickpeas, chopped red bell pepper, diced zucchini, and chopped red onion.
- In a small bowl, whisk together the olive oil, minced garlic, dried oregano, paprika, salt, black pepper, and lemon juice.
- Pour the marinade over the chickpea and vegetable mixture, and toss until everything is well coated.
- Spread the mixture evenly on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized.
