  • Cauliflower - 300 grams, riced
  • Canned chickpeas - 200 grams, drained and rinsed

  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Bell pepper - 1 medium, diced
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and garlic, sautéing for about 3-4 minutes until translucent.
  3. Stir in the diced bell pepper and continue to cook for another 3 minutes until softened.
  4. Add the riced cauliflower to the skillet, mixing well with the vegetables.
  5. Incorporate the drained chickpeas, oregano, salt, and black pepper, stirring to combine.
  6. Cook for about 10-12 minutes, stirring occasionally, until the cauliflower is tender.
  7. Remove from heat and stir in the crumbled feta cheese, fresh parsley, and lemon juice.
  8. Serve warm, garnished with additional parsley if desired.
