- Basmati rice - 150 grams
- Canned chickpeas - 240 grams (drained and rinsed)
- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons
- Red onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium pot, heat the olive oil over medium heat. Add the chopped red onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and bell pepper to the pot. Cook for another 5 minutes until the vegetables are softened.
- Stir in the ground cumin, ground coriander, dried oregano, salt, and black pepper. Cook for 1 minute until fragrant.
- Drain the soaked rice and add it to the pot along with the drained chickpeas. Stir well to combine with the vegetables and spices.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes or until the rice is cooked and liquid is absorbed.
- Remove the pot from the heat and let it sit, covered, for an additional 5 minutes.
- Fluff the pilaf with a fork, then stir in the chopped parsley and lemon juice before serving.
