Chickpea Patties
These Chickpea Patties are a delightful vegetarian option infused with Greek flavors, perfect for a summer BBQ. Crispy on the outside and tender on the inside, they are served with a refreshing tzatziki sauce.

- canned chickpeas - 400 grams, drained and rinsed
- red onion - 50 grams, finely chopped
- garlic - 2 cloves, minced
- fresh parsley - 30 grams, chopped
- fresh dill - 15 grams, chopped
- cumin powder - 1 teaspoon
- salt - 1 teaspoon
- black pepper - 1/2 teaspoon
- all-purpose flour - 50 grams
- olive oil - 2 tablespoons (for frying)
- Greek yogurt - 100 grams (for tzatziki)
- cucumber - 50 grams, grated
- lemon juice - 1 tablespoon
- salt - 1/4 teaspoon (for tzatziki)
Steps
- In a large bowl, mash the drained chickpeas with a fork until slightly chunky.
- Add the chopped red onion, minced garlic, parsley, dill, cumin, salt, and black pepper to the mashed chickpeas. Mix well.
- Gradually add the all-purpose flour to the mixture and combine until it holds together. If too wet, add a bit more flour.
- Form the mixture into patties, about 5 cm in diameter.
- Heat olive oil in a skillet over medium heat. Fry the patties for about 4-5 minutes on each side, or until golden brown.
- In a small bowl, mix the Greek yogurt, grated cucumber, lemon juice, and salt to prepare the tzatziki sauce.
- Serve the chickpea patties warm with tzatziki sauce on the side.
