Ingredients

  • Chickpea pasta - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 200 grams, halved
  • Spinach - 100 grams, fresh
  • Feta cheese - 100 grams, crumbled
  • Black olives - 50 grams, pitted and sliced
  • Lemon juice - 1 tablespoon
  • Oregano - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Bring a large pot of salted water to a boil and cook the chickpea pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
  4. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  5. Add the cooked chickpea pasta to the skillet along with the crumbled feta cheese, sliced black olives, lemon juice, dried oregano, salt, and black pepper. Toss everything together gently to combine.
  6. Cook for an additional 2-3 minutes to heat through, adjusting seasoning if necessary.
  7. Serve hot, garnished with fresh parsley.
