- Chickpeas - 240 grams (canned, drained and rinsed)
- Breadcrumbs - 50 grams
- Red onion - 1 small (finely chopped)
- Garlic - 2 cloves (minced)
- Fresh parsley - 30 grams (chopped)
- Fresh mint - 15 grams (chopped)
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for frying)
- Pasta (spaghetti or linguine) - 200 grams
- Lemon juice - 2 tablespoons
- Olive oil - 1 tablespoon (for dressing)
- Cherry tomatoes - 150 grams (halved)
- Fresh basil - 15 grams (for garnish)
Steps
- In a bowl, mash the drained chickpeas with a fork or potato masher until slightly chunky.
- Add the breadcrumbs, chopped red onion, minced garlic, parsley, mint, cumin, paprika, salt, and black pepper to the mashed chickpeas. Mix until well combined.
- Form the mixture into small patties (about 10-12) and set aside.
- Heat 2 tablespoons of olive oil in a skillet over medium heat. Fry the patties for about 4-5 minutes on each side, or until golden brown. Remove and place on a paper towel to drain excess oil.
- While the patties are cooking, bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large bowl, combine the cooked pasta, lemon juice, 1 tablespoon of olive oil, and halved cherry tomatoes. Toss to combine.
- Serve the pasta topped with the chickpea keftedes and garnish with fresh basil.
