Ingredients

  • Chickpeas - 240 grams (canned, drained and rinsed)
  • Breadcrumbs - 50 grams
  • Red onion - 1 small (finely chopped)
  • Garlic - 2 cloves (minced)
  • Fresh parsley - 30 grams (chopped)
  • Fresh mint - 15 grams (chopped)
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for frying)
  • Pasta (spaghetti or linguine) - 200 grams
  • Lemon juice - 2 tablespoons
  • Olive oil - 1 tablespoon (for dressing)
  • Cherry tomatoes - 150 grams (halved)
  • Fresh basil - 15 grams (for garnish)

Steps

  1. In a bowl, mash the drained chickpeas with a fork or potato masher until slightly chunky.
  2. Add the breadcrumbs, chopped red onion, minced garlic, parsley, mint, cumin, paprika, salt, and black pepper to the mashed chickpeas. Mix until well combined.
  3. Form the mixture into small patties (about 10-12) and set aside.
  4. Heat 2 tablespoons of olive oil in a skillet over medium heat. Fry the patties for about 4-5 minutes on each side, or until golden brown. Remove and place on a paper towel to drain excess oil.
  5. While the patties are cooking, bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  6. In a large bowl, combine the cooked pasta, lemon juice, 1 tablespoon of olive oil, and halved cherry tomatoes. Toss to combine.
  7. Serve the pasta topped with the chickpea keftedes and garnish with fresh basil.
