Ingredients

  • Chickpeas - 400 grams (canned, drained and rinsed)
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pita bread - 2 pieces
  • Cucumber - 1/2, sliced
  • Tomato - 1, diced
  • Red onion - 1/4, thinly sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Water - 2 tablespoons

Steps

  1. Preheat your grill or a skillet over medium heat.
  2. In a mixing bowl, combine the drained chickpeas, olive oil, cumin, paprika, garlic powder, salt, and black pepper. Toss until the chickpeas are well coated.
  3. Spread the chickpeas on a baking sheet and grill or sauté for about 10-12 minutes, stirring occasionally, until they are slightly crispy.
  4. While the chickpeas are cooking, prepare the tahini sauce by whisking together tahini, lemon juice, and water in a small bowl until smooth. Adjust the consistency with more water if needed.
  5. Warm the pita bread on the grill or in a dry skillet for about 1-2 minutes on each side until soft.
  6. To assemble the wraps, place a generous amount of the spiced chickpeas in the center of each pita, followed by cucumber slices, diced tomato, red onion, and chopped parsley.
  7. Drizzle the tahini sauce over the filling, fold the pita around the filling, and enjoy your Chickpea Gyro Wraps!
