- Chickpeas - 400 grams (canned, drained and rinsed)
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Pita bread - 2 pieces
- Cucumber - 1/2, sliced
- Tomato - 1, diced
- Red onion - 1/4, thinly sliced
- Fresh parsley - 2 tablespoons, chopped
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Water - 2 tablespoons
Steps
- Preheat your grill or a skillet over medium heat.
- In a mixing bowl, combine the drained chickpeas, olive oil, cumin, paprika, garlic powder, salt, and black pepper. Toss until the chickpeas are well coated.
- Spread the chickpeas on a baking sheet and grill or sauté for about 10-12 minutes, stirring occasionally, until they are slightly crispy.
- While the chickpeas are cooking, prepare the tahini sauce by whisking together tahini, lemon juice, and water in a small bowl until smooth. Adjust the consistency with more water if needed.
- Warm the pita bread on the grill or in a dry skillet for about 1-2 minutes on each side until soft.
- To assemble the wraps, place a generous amount of the spiced chickpeas in the center of each pita, followed by cucumber slices, diced tomato, red onion, and chopped parsley.
- Drizzle the tahini sauce over the filling, fold the pita around the filling, and enjoy your Chickpea Gyro Wraps!
