- Garlic powder - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Ground cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Pita bread - 2 pieces
- Cucumber - 1 small, diced
- Tomato - 1 medium, diced
- Red onion - 1/2 small, thinly sliced
- Fresh parsley - 2 tablespoons, chopped
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Water - 2 tablespoons
- Salt - to taste
Steps
- Preheat a grill or skillet over medium heat.
- In a mixing bowl, combine the chickpeas, olive oil, garlic powder, smoked paprika, ground cumin, salt, and black pepper. Toss to coat the chickpeas evenly.
- Transfer the seasoned chickpeas to the grill or skillet and cook for about 10-12 minutes, stirring occasionally, until they are golden and slightly crispy.
- While the chickpeas are cooking, prepare the tahini sauce by whisking together tahini, lemon juice, water, and a pinch of salt in a small bowl until smooth. Adjust the consistency with more water if needed.
- Warm the pita bread on the grill for 1-2 minutes on each side until soft and pliable.
- To assemble the wraps, place a generous portion of chickpeas on each pita, followed by diced cucumber, tomato, red onion, and chopped parsley.
- Drizzle with tahini sauce, fold the pita in half, and serve immediately.
