  • Garlic powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pita bread - 2 pieces
  • Cucumber - 1 small, diced
  • Tomato - 1 medium, diced
  • Red onion - 1/2 small, thinly sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Water - 2 tablespoons
  • Salt - to taste

Steps

  1. Preheat a grill or skillet over medium heat.
  2. In a mixing bowl, combine the chickpeas, olive oil, garlic powder, smoked paprika, ground cumin, salt, and black pepper. Toss to coat the chickpeas evenly.
  3. Transfer the seasoned chickpeas to the grill or skillet and cook for about 10-12 minutes, stirring occasionally, until they are golden and slightly crispy.
  4. While the chickpeas are cooking, prepare the tahini sauce by whisking together tahini, lemon juice, water, and a pinch of salt in a small bowl until smooth. Adjust the consistency with more water if needed.
  5. Warm the pita bread on the grill for 1-2 minutes on each side until soft and pliable.
  6. To assemble the wraps, place a generous portion of chickpeas on each pita, followed by diced cucumber, tomato, red onion, and chopped parsley.
  7. Drizzle with tahini sauce, fold the pita in half, and serve immediately.
