- Pizza dough - 1 medium ball (about 250g)
- Canned chickpeas - 1 cup (240g), drained and rinsed
- Olive oil - 2 tablespoons (30ml)
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cherry tomatoes - 1 cup (150g), halved
- Red onion - 1/2 medium, thinly sliced
- Cucumber - 1/2 medium, diced
- Fresh parsley - 1/4 cup, chopped
- Vegan tzatziki sauce - 1/2 cup
Steps
- Preheat the oven to 220°C (425°F).
- In a medium bowl, combine the drained chickpeas, olive oil, minced garlic, ground cumin, ground coriander, smoked paprika, salt, and black pepper. Mix until the chickpeas are well coated.
- Spread the chickpea mixture on a baking sheet and roast in the preheated oven for 15 minutes, stirring halfway through, until slightly crispy.
- While the chickpeas are roasting, roll out the pizza dough on a floured surface to your desired thickness and shape. Transfer it to a pizza stone or baking sheet.
- Once the chickpeas are done, remove them from the oven and spread them evenly over the pizza dough.
- Top the pizza with halved cherry tomatoes, sliced red onion, and diced cucumber.
- Bake the pizza in the oven for an additional 10-12 minutes, until the crust is golden brown.
- Remove from the oven and let cool for a few minutes before slicing. Serve topped with fresh parsley and a generous drizzle of vegan tzatziki sauce.
