Ingredients

  • Pizza dough - 1 medium ball (about 250g)
  • Canned chickpeas - 1 cup (240g), drained and rinsed
  • Olive oil - 2 tablespoons (30ml)
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 1 cup (150g), halved
  • Red onion - 1/2 medium, thinly sliced
  • Cucumber - 1/2 medium, diced
  • Fresh parsley - 1/4 cup, chopped
  • Vegan tzatziki sauce - 1/2 cup

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a medium bowl, combine the drained chickpeas, olive oil, minced garlic, ground cumin, ground coriander, smoked paprika, salt, and black pepper. Mix until the chickpeas are well coated.
  3. Spread the chickpea mixture on a baking sheet and roast in the preheated oven for 15 minutes, stirring halfway through, until slightly crispy.
  4. While the chickpeas are roasting, roll out the pizza dough on a floured surface to your desired thickness and shape. Transfer it to a pizza stone or baking sheet.
  5. Once the chickpeas are done, remove them from the oven and spread them evenly over the pizza dough.
  6. Top the pizza with halved cherry tomatoes, sliced red onion, and diced cucumber.
  7. Bake the pizza in the oven for an additional 10-12 minutes, until the crust is golden brown.
  8. Remove from the oven and let cool for a few minutes before slicing. Serve topped with fresh parsley and a generous drizzle of vegan tzatziki sauce.
