- Chickpeas - 400 grams (canned, drained and rinsed)
- Red onion - 50 grams (finely chopped)
- Garlic - 2 cloves (minced)
- Fresh parsley - 30 grams (chopped)
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole wheat flour - 2 tablespoons
- Olive oil - 1 tablespoon (for cooking)
- Pita bread - 2 pieces
- Tomato - 1 medium (sliced)
- Cucumber - 1/2 medium (sliced)
- Tzatziki sauce - 100 grams
Steps
- In a mixing bowl, mash the drained chickpeas using a fork or a potato masher until mostly smooth with some chunks remaining.
- Add the chopped red onion, minced garlic, chopped parsley, cumin, coriander, paprika, salt, black pepper, and whole wheat flour to the mashed chickpeas. Mix until well combined.
- Form the mixture into two even patties.
- Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side or until golden brown and heated through.
- While the patties are cooking, prepare the tzatziki sauce if not using store-bought. Combine Greek yogurt, grated cucumber, minced garlic, lemon juice, salt, and dill in a bowl.
- Warm the pita bread in a dry skillet or microwave for a few seconds until pliable.
- Assemble the burger by placing each chickpea patty in a pita, topped with sliced tomato, cucumber, and a generous dollop of tzatziki sauce.
- Serve immediately with a side salad or your choice of vegetables.
