- canned chickpeas - 400 grams, drained and rinsed
- red onion - 50 grams, finely chopped
- garlic - 2 cloves, minced
- fresh parsley - 30 grams, chopped
- ground cumin - 1 teaspoon
- ground coriander - 1 teaspoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- all-purpose flour - 50 grams
- olive oil - for frying
- whole wheat pita bread - 2 pieces
- sliced cucumber - 100 grams
- sliced tomatoes - 100 grams
- sliced red onion - 50 grams
- vegan tzatziki - 100 grams (dairy-free alternative)
Steps
- In a large bowl, mash the drained chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Stir in the chopped red onion, minced garlic, chopped parsley, ground cumin, ground coriander, salt, and black pepper until well combined.
- Gradually mix in the all-purpose flour until the mixture holds together but is not too sticky.
- Form the mixture into 4 patties (about 100 grams each).
- Heat a non-stick skillet over medium heat and add enough olive oil to coat the bottom.
- Once the oil is hot, cook the patties for about 4-5 minutes on each side, or until golden brown and crispy.
- While the patties are cooking, warm the pita bread in a separate skillet or microwave.
- Assemble the burgers by placing a chickpea fritter inside each pita, topped with sliced cucumber, sliced tomatoes, sliced red onion, and a generous dollop of vegan tzatziki.
- Serve immediately and enjoy!
